Mashed potato pancakes
For 1 portion:
?270g mashed potatos
?35g of grated cheddar cheese
?2 spring onions (chopped)
?60g all purpose flour
?1 egg beaten
Plus oil for frying, salt and pepper to season.
Combine the potato mash with shredded cheddar cheese, spring onions, whisked egg and flour. Add salt and pepper to taste. Mix well together with a spoon.
Heat 1 tbsp of vegetable oil in a large non-stick pan over medium heat. With a spoon spread the mash mixture on the skillet and use the spoon to create a circular pancake shape. You should get 4 bigger pancakes from this recipe. Bake on each side for a few minutes until golden brown.
Serve with soured cream and chives on top (optional).
