Autumn cheesecake... as the autumn is over ? You will need: 1. BASE 250g lotus cookies 60g butter 2. FILLING 250g mascarpone 250g ricotta 250g sour cream 140g powdered sugar vanilla flavour/ 1 pack of vanilla sugar lime zest 200g lotus cookies 1 pack of gelatine 3. SALTED CARAMEL 200g sugar 1tbsp water 1/2 butter (125g) 100ml heavy cream What to do: 1. Crush the lotus cookies into a "powder" and combine with melted butter. Pull into a baking form. Set aside. 2. Mix mascarpone,ricotta,sour cream, sugar, vanilla and lime zest; until the sugar is dissolved. Add the crushed lotus cookies. 3. Prepare the gelatine as written on a covering. 4. Add the gelatine into the cream filling. 5.Pour the filling over the lotus base. Put into a fridge for at least an hour. 6. For the caramel sauce, let the sugar melt over a pan with a tbsp of water until it is light brown; set aside and stir in the butter. Put it on a stove again and pour in the heavy cream. Stir until it reaches the right creamy texture. 7. Pour the caramel sauce over the cheesecake and put it into a fridge again for other 1-2hours. 8. Decorate with nuts,profiterols, chocolate chunks, chestnuts, ...or whatever you like :))) Enjoy! ??
